PAVLE MILIC

winemaker and co-proprietor

Pavle has a storied career in front-of-house of restaurants in New York, Napa Valley, and Arizona. An early champion of Arizona wines, he volunteered during harvest in Napa to learn winemaking. He returned to Arizona to open FnB Restaurant in Scottsdale with chef Charleen Badman and built a wine list that promoted Arizona wines. The FnB wine list garnered a prestigious James Beard Award nomination for Outstanding Beverage Program. With Los Milics Vineyards, he has realized his dream not just to curate, but to create, uniquely Arizona wines.

    Mo Garfinkle

    co-proprietor

    Mo Garfinkle is a former aviation consultant and wine enthusiast who had searched the world to buy a winery. In that career Mo consulted to airlines, international airports and governments throughout the U.S., Asia and Europe. He was part of the initial team that created the first global aviation alliance, the Star Alliance. In addition to legal and business skills, Mo is a visionary with a deep love for Arizona.

      ITA MILIC

      Born and raised in the 5th region of Chile, Villa Alemana, Ita relocated to the United States after meeting Pavle, the love of her life. She holds a degree as a medical technician from the Douc-uc Catholic University of Valparaiso, Chile. In Arizona, Ita worked in various restaurants where she developed a deeper love for wine. She spent time with the Villard family in Chile during harvest to learn more about the winemaking process and took courses through UC Davis to further her knowledge. Along with Pavle, Ita also oversees the operation of the Elgin tasting room.

      Oswaldo Medina

      Oswaldo Medina grew up in Morelia, Michoacán, Mexico, where his love for wine started to take root. After studying viticulture and enology at Fresno State, he jumped into the California wine scene—rolling up his sleeves as a Cellar Tech at J. Lohr Winery and interning at SummerWood Winery. With nearly 10 years as Assistant Winemaker at Hunt Cellars under his belt, Oswaldo brought his passion and know-how to Los Milics Vineyards. There, he’s not just crafting award-winning wines but also keeping things running smoothly behind the scenes. For Oswaldo, winemaking isn’t just a job—it’s a lifelong passion and a way to connect people, culture, and stories through every bottle he helps create.

        Trevor Routman

        TREVOR ROUTMAN

        Executive Chef and Director of Culinary Operations

        Trevor brings a storied career to Los Milics having worked with James Beard award-winning chefs and restaurants including Lula’s Café in Logan Square, Chicago. In Arizona he cooked at Pa’La in Phoenix and was head chef at Source in Gilbert. Trevor defines his style as seasonal, local, and driven by the quality of the ingredients. “It’s a portrayal of Arizona. There are so many producers, ranchers, and farmers in the Sonoita area. I am excited to forge new partnerships and source as closely to the area as we can,” he said.

        Trevor was born in Chicago and grew up in Northbrook, Illinois. He attended Kendall College Culinary Arts Program and moved to Arizona to finish his studies at the Arizona Culinary Institute. In his expanded role as Executive Chef and Director of Culinary Operations,Trevor develops menus for Los Milics tasting rooms in Elgin and Scottsdale, and two Tucson tasting rooms slated to open in 2025 and 2026, as well as dinner menus for The Biscuit.

        SARAH ANDREWSON

        Manager | Scottsdale Tasting Room

        Sarah got her start in wine during college when she took a part-time job at a winery in her home state of Wisconsin. She loved it so much that she continued to work there even after completing her studies. Sarah relocated to Arizona in 2019 and quickly immersed herself in the local wine scene while pursuing a more formal wine education. Today she is a WSET Level III certified wine professional with a passion for Arizona wine and over 10 years of experience in the industry.
